40 is pushing the limits, I would say stay at least with a 45 offset. There are plenty of wheels in all price ranges out there for Subarus. Would you buy an intake for a Neon and try to make it fit on your WRX? The farther off your offset is, the faster you will be wearing out tires and wheel bearings. Not to mention your steering geometry will be all out of whack and your handling will suffer. Stick to the proper fitment if at all possible.
That being said, you have it backwards. A 40 offset wheel sticks out farther than a 55 offset wheel. So spacers would only further decrease the offset, which wouldn't help. Increasing camber isn't going to really help either, but you do need eccentric bolts to adjust the rear.
