Throttle-by-wire also gives you the ability to have different throttle maps and/or pedal accelleration functions (like mouse accelleration)

On my previous MB very quick throttle input would give you more aggressive throttle plate opening. (ex. quickly going from 5% to 60% may open the throttle plate to 100%) It would also adapt to your driving style, at least it would try.

On the BMW cars with SMG transmissions the throttle-by-wire is needed during shifts. The best part of this is the throttle blipping to rev match when downshifting. These cars also have a two position throttle curve button.
