From what I understand, "authentic" uses cheez-whiz.....seriously. So authentic may not be the thing I'm seeking.

I believe the original Pat's steak was made w/ provolone. Cheese-Whiz is a more recent invention than the cheesesteak sammich... but damn it makes for a good and sloppy sandwich.
Also, the Philly shop on Keitzke uses cheese-whiz... I'm surprised you didn't like 'em.
