Yea, its the -/+ setting on the camera. This is a great guide. Yea the changing light is also a problem. For props I longer a shutter speed to get the blur, so you need to up your F stop. The jets you can use a higher shutter speed and lower f stop.

I was mostly keeping the ISO & aperture settings constant, and varying the shutter speed to meter light. The biggest problem seemed to be that I could be pointing the camera west at a plane one second, and have a good amount of light, and then when I tracked the plane towards the sun the light would be all screwed up. Towards the end of the day I kinda settled on a couple of shutter speeds that seemed to be in between what both light extremes needed and just clicked away, hoping I would get some useful shots.
