That your pistons are dragging and creating heat from friction instead of heat from combustion... i.e. you're out of oil. Basically, you should expect EGTs to rise at a fairly constant rate as the car goes through a long pull in 3rd or 4th gear (or 4th and 5th gear on a 6MT). If you're peaking out at around 1600-1700 you're running a little hot, but as long as the temps drop off quickly when you get out of the throttle, things are fine.
It's when the temps spike quickly (i.e. the car's running lean and temps ramp up too fast), or when the temps stay up (i.e. the heat is being maintained by something other than the heat of combustion) that you have issues.
