Anyway, now that I complained about it, I have a question. Will it be okay to re-use the head -> manifold gasket? My reasoning that it is okay is that everything is really flat and I took all the built up carbon off of the head, so it all should seal up really nice again...

Technically, it's a crush-once gasket. You'll note that the only part that seals is that little ridge that runs the inside lip of the gasket.

In practice, you can re-use them three or four times as long as you torque the exhaust bits properly.
